Decadent and lemony salmon pairs great with the crispness of the asparagus! Salmon has a very rich content of protein and omega-3 fatty acids
Ingredients:
Lemony Salmon and Asparagus
3 6oz salmon fillets
3 cloves of garlic, minced
1/2 tsp of salt
2 tbsp of olive oil
2 lemons, thinly sliced
1 lemon, juiced (2 tbsp)
2 tbsp of parmesan cheese (omit if non-dairy)
2 lbs of fresh asparagus, trimmed
Step1:
Pre-heat oven to bake at 350°.
Step2:
Line a rimmed baking sheet with aluminum foil
Step3:
Arrange pre-cut salmon fillets in the center of the sheet, and then arrange the asparagus cuts around them.
Step4:
Add thinly cut lemon slices around the salmon and overtop of the asparagus.
Step5:
In a small mixing boil, combine olive oil, lemon juice, salt, and pepper. Pour this mixture overtop of the salmon and asparagus.
